A great way to manage your time and what you eat, being mindful to health benefits and weight loss, is bulk cooking with the use of your Crock Pot.

A Crock Pot or Slow Cooker can aid you to select healthy ingredients you may otherwise pass on using in your day to day cooking.

| For myself this would be carrots, peppers, and bok choy which I don’t eat on the regular. |

 

Here is an easy throw it all together recipe that I have used many times over the years.

Ingredients:

Stew Beef about 2 dozen+ bite size pieces
Broccoli several to a dozen florets
Spinach 2 to 3+ large handfuls
1 Carrot Large
1 Bok Choy Bushel
2 Tomatoes medium sized
1 to 2 Canned Tomatoes organic no salt added (Optional. Helps with creating a broth).
1 Red Onion
½ Red, Green, and Yellow Peppers
Mushrooms 1 to 2 handfuls of Cremini and Shitake
Fresh Herbs:
Basil, Sage, Oregano, Turmeric, Thyme
Dried Herbs and Spices:
Smoked Paprika, Cumin, Basil, Turmeric
4 Garlic Cloves minced (2 for pan, 2 for pot)
1 teaspoon of Ginger minced (½ for pan, ½ for pot)
Option of cooking oils for browning the meat; Butter, Olive, or Coconut Oil

Note: Some brands of dried Turmeric is more potent tasting than others so you would need to be mindful with what you purchase or how much you add.

The amount of produce and beef used will vary with the size of your crock pot. Ultimately seek and purchase organic produce and, as an option, use both fresh and dried herbs and spices.

Step 1
Preparation

Cut all produce, Peppers, Carrot, Tomatoes, Mushrooms, and Red Onion into bite size portions.
Cut all your fresh herbs, garlic, ginger, and turmeric.

Step 2
Pre-Cook

Brown the meat at medium temperature using butter, olive or coconut oils.
Add ½ of the red onion and mushrooms as well as 2 cloves of minced garlic, half teaspoon of the ginger and half of your cut fresh herbs. You can add some additional dried herbs if desired.
Now start with putting the canned tomatoes in the crock pot gauging how much more your pot can hold and start evenly putting in the produce and meat.
Add 1 to 2 cups of water if you opt out of canned tomatoes.
Add the rest of the garlic, ginger, mushroom, red onion, and herbs and spices.

Once everything is put in, set your time. Some crock pots can vary with timings and temperatures, with the beef precooked I set mine for 4 hours.

Step 3
Post-Cook

During the cooking give the pot a stir to help mix everything up.
Stirring is easier when the cook is about an hour in so save mixing it up at start since the pot will be filled to capacity.
Season to taste.

Step 4
Serve

Using a medium sized bowl, I specifically select several pieces of meat and vegetables per serving.
If not on any strict dieting regime, I like it with a single loaf of ciabatta bread and butter as it’s great for dipping.
