Ingredients
Extra-virgin olive oil to coat pan
5 cherry tomatoes, halved
1 green onion scallion sliced
1 handful baby spinach
4 eggs whole
Optional Cheese Old Cheddar shredded
Pinch of Sea salt
Pinch of freshly ground pepper
scramble up your eggs in a bowl and pour to medium heat pan. Add your veg and when the eggs start to get cooked lift the edges so the runny uncooked egg seeps underneath. Add your salt and pepper. Add your shredded cheese optional.
Fold and serve.
